Chit Malt
Platinum Swaen© Chit malt is a highly under-modified malt, specially developed to enhance foam stability and improve mouthfeel. Produced through a shortened germination process, this malt retains a high proportion of high molecular weight proteins – the key contributors to long-lasting, stable foam in beer.
Unlike fully modified malts, Platinum Swaen© Chit malt preserves the natural structure of the barley grain. This results in a protein-rich profile that strengthens head retention without compromising clarity or fermentability. It also subtly boosts mouthfeel and body, giving beers a fuller, creamier texture.
Typically used at 2–10% of the grist, this malt is a functional powerhouse in everything from lagers and wheat beers to hop-forward styles like IPAs, where maintaining a beautiful head is essential.
