Acid Blend
Acid blend is a 40-30-30 mix of citric acid, malic acid, and tartaric acid.   By adding one teaspoon per gallon you increase acidity by 0.1%.


Calcium Carbonate
Precipitated chalk used to reduce acidity in high acid wines or to harden water for beer of appropriate style. 1 gram per gallon adds 106 ppm calcium, 158 ppm carbonate.


Citric Acid
Adding one teaspoon per gallon will increase acidity by 0.1%.


Potassium Carbonate
Reduces acidity in wine, use 1/2 teaspoon per gallon to reduce acidity 0.1%.


Bentonite is a clay-based clarifier that absorbs colloidal substances. Usually added prior to fermentation, sometimes during secondary to wine.
